There exist 2 types of it: Palestinian & Syrian. Well, this recipe explains how to cook the Syrian version.


  1.  Large Eggplant ( x2 large )
  2.  Chopped meat ( 1/4 Kg )
  3.  Mixed nuts (pine nuts, walnuts, almonds)
  4.  Ghee ( x2 spoon )
  5.  Rice ( x1 cup, size of water cup )
  6.  Onion ( x2 )
  7.  Mixed spices (chili pepper, black pepper, cardamom)
  8.  Cup of oil (mazolla)


  1.  Peel the eggplant (stripes) then cut it into round slices (medium thickness), fry it in the oil until it darkens and then lay it on drying sheet/paper (to drain excess oil)
  2.  The rice is soaked in the mean time
  3.  The meat is boiled in two cups of water along with the wedge sliced onions for about 20 minutes
  4.  Separate the meat's gravy, add the spices to it, let it boil on the stove, and then pour in the previously soaked rice, and leave it to cook for 25 minutes on low heat
  5.  In a deep dish, lay the pieces of meat and onion then a layer of fried eggplant on top, and then the cooked rice
  6.  Use another dish (shallow this time) and flip the deep dish over to it so as it rests upside down on the second dish. (you may also use a cheese cake container)
  7.  Fry the mixed nuts in ghee and then distribute it all over the flipped dish
